We have chosen the brand Red Cliff Whisky to reflect the name that originally given to what is now known as Woody Point, by Matthew Flinders in July 1799. (reference https://www.redcliffebook.com/post/matthew-flinders).
Under Australian law we can only call our Single Malt product as a Single Malt Whisky once it has been aged in a barrel for a minimum of two years.
Our first two barrels were filled on 15th July 2023 and all things going well will be ready for release in August 2025.
We are planning to lay down additional barrels every six months with the aim to have a Whisky release ready for release on a rolling six month cycle.
